One word! Yum…yum yum yum yum yum yum yum! I have been searching for a restaurant quality recipe for Chana Masala ages and now I have it. Just a quick question if I may, of all the oils you could use for this recipe why grape seed? I use grape seed oil a lot but I have never associated it with Indian cuisine.Don’t forget to save the “chickpea water” in the cans, also known as aquafaba–it has sooo many interesting uses. If you haven’t heard of it, Google aquafaba and be amazed!I made this and it was incredible. I subbed honey because I’m too cheap to go get coconut sugar, but overall an excellent balance of flavors in the dish. The instructions were very clear and the suggested rice cooking method is now the only way I make rice. 5/5 will make again. Maybe next time I’ll add a dollop of Greek yogurt and some more veggies.P.S. I’ve loved every recipe of yours I’ve tried! However, I’m still waiting on the zucchini noodles. I halved the recipe and made a couple of substitutions because of what I had on hand. Regular white sugar subbed for coconut sugar and canola subbed for grapeseed oil. I skipped the cilantro because my wife dislikes it. Amazing and easy. Will be making this again.Only criticism I have for the recipe myself is because I had to add so much water I feel like crushed tomatoes would work better than puree.Enjoyed this dish very much. Many ingredients so suggest measuring and separating spices first. Watch the heat – 1 Serrano, 1 jalapeno and 1 Anaheim were plenty for us (and we like pretty hot TexMex). Also, I doubt this can be done in 30 mins.

Excellent! I just discovered your blog and this is my third recipe this week! All there have been amazing. I can imagine that letting this one sit in the fridge overnight will only serve to combine the flavors and make it even better. Kept is simple and served over basmati rice.Other than chai, he also makes amazing summer drinks like this afghan drink, dough and this masala chaas. Making this chaas does not require any special skills, all you need is a good blender. You just have to mix everything together till combined and then pour into glasses and enjoy. It’s that simple!Made this tonight and it was SO good. I love that you included coconut palm sugar in the recipe. I think that, along with the DIY garam masala, really made all the difference in making this dish complex tasting but so low in effort and so easy for weeknight meals. :)I have tried so many homemade Indian dishes from various recipes, but none of them quite lived up to the stuff I’ve had in restaurants.. until this one! Hi! This chana masala sounds AMAZING! However, I have two young children (1 and 3) and am wondering about the heat/spiciness of this dish. If it’s super spicy, I’d love your advice on how to substitute the chilis… You never let me down minimalist baker! Another fabulous recipe! I executed exactly as written but added in a couple of cups of kale- AMAZING! Even my 3 year old sai “this is yummy stew!”Delicious! Served it with crispy Bombay Potatoes and shredded carrots soaked in lemon. Looking forward to leftovers tomorrow, imagine it will be even yummier then. Just had this for lunch and can confirm it’s utterly delicious! Made a batch and ate it straight away, the flavour was just as good as if this had been left until the next day. I’m usually a bit put off by anything thats cumin based as in the UK, most of our shop bought curries or Mexican dishes have no other flavour to them but over powering cumin – this DIDN’T have that at all!! I added 2tsp of sugar and less green chilli and it was the perfect balance of spicy/sweet for me. This is the first recipe i’ve tried and I will be making again and doubling this to freeze! Awesome!I made this last night and it was amazing!!! This will definitely be a staple in my house. This dish was full of flavor and I am definitely looking forward to eating this over sweet potatoes and broccoli.This was fantastic! I used one large jalapeño peoper and 4 large vine ripe tomatoes chopped which I cooked down before adding chick peas. I cut out the sugar So delicious.Amazing!! I made it last night and my non vegan husband LOVED it, this dish has soo much flavor. The only thing was I used 2 Serrano peppers and it was very spicy, I added more coconut sugar to offset the spicy but it only brought the spicyness down a little and I didnt want to add too much sugar. I have a lot left over today so I will add a little more tomato sauce hoping that will help. Should I add the tomato sauce and put it on a low boil for 5 min? I do so love what you learn about a culture through their cuisine. It’s funny that a restaurant in NORWAY inspired you to develop a recipe for an INDIAN dish. Chana masala is one of my favorite Indian dishes and, fortunately, one of the quickest to prepare. I love, as in all of your recipes, the ease of preparation. As much as I love a good hearty masala packed with chickpeas and a colorful batch of vegetables, sometimes I just don’t have the time. In those moments, I bring in this recipe. Poori masala makes for a good breakfast or lunch or brunch. When I took the pics, I had also made aamras to go along with the pooris. The combo of aamras and any potato sabji with pooris is too good I absolutely loved the recipe, just like any other I have tried from this website. This is one of my favorite recipes from this site and of all time! It’s such a great recipe, and I make it frequently for healthy meal prepping, especially since it freezes well. I add more cilantro and more peppers (jalapenos usually) because I like an extra kick. I serve it with Chipotle-style cilantro-lime brown rice. I LOVE Masala! Thank you so much for bringing masala to the masses with ingredients that are normal and easy to find. I’ve always been afraid to try making it myself, but no longer. I’m making this paste ASAP!I made this last night for the first time, and after many trials and errors with other recipes, this is the holy grail of chana masala! By far this is the best recipe for chana masala…..ever. My search is over. I had to sub lime juice for the lemon but other than that, followed the recipe to a “T”. Sauteeing the onions, etc. in coconut oil gives a wonderful aroma, and is definitely worth it. I served it with basmati rice, cucumber raita, chopped cilantro and paratha and roti.   5. Make sure to use your homemade chaat masala up within 2 to 3 months of making it, as the ingredients will lose their potency if stored too long. Store your masala in a glass container, in a cool, dry place. Do not store it with other spices as the ingredients in chaat masala (especially the black salt) are highly aromatic and the other spices will take on its aroma. This is a basic recipe but when you've made it a few times and as you become familiar with the ingredients and how they taste with each other, you can also experiment with other combinations of the spices (increasing some and decreasing others) to make your own custom blend! ​

They said that it tasted as if I had been making Chana Masala exactly as it is made in India, even though this was only the second time I made this recipe. The only modification, that I know I made was I didn’t put in any coconut sugar. This recipe is so easy and delicious!!! I did add some fresh tomatoes because I didn’t have enough canned tomatoes, a ton of chopped garlic because we love garlic and I added some coconut milk. I doubled this recipe and made a huge pot, my husband loved it so much he asked me to make it again this week!!I made this tonight with the purpose of dinner and being able to freeze it to have easy dinners during school, there’s plenty left over!! I really like spicy so I used 3 Serrano peppers and 2 TSP of maple sugar and it was just spicy enough to not cancel out the other flavors. I also made the garam masala from the recipe given and it was also great! I had to use all green cardamom pods though since neither market in town had black. This isn’t the first recipe I’ve made from the Minimalist Baker and won’t be the last!

Hi MB (Minimalist Baker). I love this recipe – we make it once a week. I love spicy but onions and garlic some sit well with me. I substituted chopped bell pepper for the onions and an extra hot pepper for the garlic. All of the flavor none of the stomach pains. One other note- the first time I made this I was shopping at Trader Joe’s, no Garham Masala l but I grabbed the TJ pumpkin pie spice mix and it worked perfectly!! I like your receipe and would like to mention about the two ingredients in the receipe that you have mention. I am not here to disrespect/judge or blame you. Two ingredients are cilantro & coriander which are basically two same herbs. Made this and paired with a jarred tikka masala + cauliflower. And man! This side stole the show. Honestly the best homemade Indian dish I’ve made to date.Store the paste in a jar in the fridge for about a week or store in the freezer for, well, for probably forever. This sauce is great for making homemade chicken tikka masala, but it also goes with just about anything ever – kind of like a curry. We made this with butternut squash, chicken, and the meatless-meatballs that are pictured. Served over rice… mmmhmmmm. SO GOOD.

I made this last night and it was unbelievable! The only alterations were that I used canola oil (instead of grape seed or coconut) and I added a bit more garam masala.I like to simmer it down to a fairly thick consistency, enough to make burritos with. I’m sure it sounds weird to some, but a Chana Masala burrito is amazing! Today I added Sweet Potatoes for the first time and WOW! So dang good.We made this tonight. It was relatively easy and very tasty. We had it with the broccoli and sweet potatoes. I didn’t miss the rice. (But we DID also have it with buttered naan….not the healthiest but amazing for soaking up that sauce).

I made this tonight. Minimized oil to a tiny splash at the end (sauteed onions, etc., In water). Had no cilantro so used parsley and passed on the peppers. Added fresh spinach towards the end. The chili powder had plenty of heat. Used maple syrup instead of coconut sugar. I mention this in case people don’t have the exact ingredients. IT WAS AMAZING. Garam masala as the name suggests is a hot spice. It's the super spice of the Indian kitchen. Some of the spices used in a garam masala are black pepper,mustdard seeds, cumin seeds, cloves.. This recipe came out very well. Thank you for it. It was easy and quick to make. I used sunflower oil instead of coconut oil. I also added a dollop of curd to improve the texture. Forgot to add lemon but the tomatoes were tangy enough to suffice. Using freshly made garlic ginger and freshly ground spices definitely improves the taste a lot. Everyone loved the preparation. Bomb-diggity recipe ? personal flavor: only used one whole jelepeño (minus stem), puree half the tomatoes, half cup water …and didn’t have any sugar so used a bit of maple syrup ?.i’ve made this recipe at least 30 times, it’s def my fav. i always have the ingredients on hand and they are so cheap and this is so delicious!This looks like a winner, and even if it’s not 100% “authentic,” all I care about is yummy and relatively easy. As for the magic basmati rice at the curry joints, I’m pretty sure it’s copious amounts of ghee (clarified butter), not unicorn tears, that make it so CRACK-like. 🙂
